  • Waffle Wednesday. A Waistline-Friendly Version of this Childhood Favorite

    Waffles—the tasteful nostalgia of Sunday morning breakfast as a child, making it the perfect pick-me-up for your mid-week slump.  Steering away from the sinful side of this delicious dish, we’ve substituted much of the flour for whole wheat and opted for a nonfat buttermilk creation.  With only 240 calories per serving, these waffles will satisfy your sweet tooth cravings without breaking your diet. Don’t have the time to whip this together before beginning your morning routine?  Enjoy breakfast for dinner and make the entire family happy…guaranteed.

    INGREDIENTS

    1 cup whole-wheat flour

    1 cup all-purpose flour

    1 1/2 teaspoons baking powder

    1/2 teaspoon salt

    1/4 teaspoon baking soda

    2 cups nonfat buttermilk

    1 large egg, separated

    1 tablespoon canola oil

    1 tablespoon vanilla extract, (optional)

    2 large egg whites

    2 tablespoons Splenda

     

    PREPARATION

    Stir whole-wheat flour, all-purpose flour, baking powder, salt and baking soda in a large bowl. Whisk buttermilk, the egg yolk, oil and vanilla (if using) in a separate bowl. Add the wet ingredients to the dry ingredients and stir with a wooden spoon just until moistened.

    Beat the 3 egg whites in a grease-free mixing bowl with an electric mixer until soft peaks form. Add sugar and continue beating until stiff and glossy. Whisk one-quarter of the beaten egg whites into the batter. Fold in the remaining beaten egg whites with a rubber spatula.

    Preheat a waffle iron. Brush the surface lightly with oil. Fill the waffle iron two-thirds full of batter. Cook until the waffles are crisp and golden, 5 to 6 minutes. Repeat with the remaining batter, brushing the surface with oil before cooking each batch.

  • Taco Tuesday: A Healthier Alternative to Your Fav Mexican Fare

    What’s a Tuesday without a taco?

    We’ve been using Taco Tuesday as the perfect excuse at adding a little fiesta into our work week siesta for years.  It’s a cheap, easy and fun way to have everyone looking forward to dinner. Here at RejuvaHealth, we’ve searched the recipe books to provide you with a simplistically delicious Mexican dish without the added calories that the entire guest list will enjoy.  Our secret?  Substitute ground beef for ground turkey and taco shells for low carb tortillas.  This will greatly reduce the fat intake and still provide the essential protein.  Did we mention that the each serving size is only 170 calories?  Seconds, please!

    TacoTuesday

    Makes 6 servings

    • 1.5 lbs extra lean ground turkey
    • 6 low carb tortillas* (approximately 50 calories each, we used La Tortilla)
    • 1 1/2 tbs chili powder
    • 1/4 tsp garlic powder
    • 1/4 tsp onion powder
    • 1/4 tsp oregano
    • 1/2 tsp paprika
    • 1 tsp cumin
    • salt and pepper to taste

    If you’d like your tacos to have a hard shell, place the tortillas in the oven so they drape from two bars of your oven rack. Broil for 3-5 minutes or until crispy and golden brown!

    In a large nonstick pan, cook turkey meat on medium heat until brown. In a small bowl, mix together all the spices for the taco seasoning and add to turkey in the pan. Spoon turkey into your tortillas and top with lettuce, tomatoes, and cheese!

    Pizza for breakfast – it’s an automatic college flashback to a morning leftover of a late night snack.  No worries, this pizza doesn’t come in a box and it’s actually healthy for you.  It’s a delicious creation of nature’s favorite ingredients.  With a lemon, ripe avocado and organic egg atop a Greek pita, you’ve got the most perfect veggie breakfast ever!  Filled with protein, omega-3s and enough fiber to keep you full throughout your melancholy Monday morning, this pocketless pita pizza is a totally tasty treat!

    Ingredients: Greek or pocketless pita, or any kind of flat bread Juice from 1 lemon 1 ripe avocado 1 organic egg Sea salt to taste Pepper to taste Chili flakes to taste Ground cumin to taste Cumin seed to taste Extra virgin olive oil to taste

    Directions: Toast pita until crisp, mash avocado and spread on pita, drizzle with a dash of lemon, olive oil and spices, place egg cooked to your liking on top and serve. Optional: Add prosciutto or a sprinkling of feta over the top for a richer snack.

    With the biggest hyped movie of 2013, The Great Gatsby, coming out in May, there’s no doubt that people will gain inspiration from the movie’s impeccable costume design.  It was the golden age full of money and rebellion– a time when embellishments were plentiful, the bob was the “bee’s knees” and shoes were designed specifically for dancing.  Whether it’s a simple hair style or a red carpet dress, we foresee this flapper-style glamour making a comeback in full force.

    A Hairy Situation

    Like much of the population, you’ve probably made a New Year’s Resolution.  Similarly, like much of the population, you probably end up breaking it after a few months.

    At RejuvaHealth, we’re all for helping you renew yourself – whether it’s by providing you with your favorite new compression legwear or just offering some helpful lifestyle tips.  So, for the many of you whose resolution is to “lose weight” or “get healthier”, we’ve comprised a few tips that will help you to mentally stay strong throughout the entire year.

    Declare the New Year as a Fresh Start

    You only get this chance once a year.  It’s like being able to press the reset button on your life (well, almost). This seems easy, right?  That is, until you head back to work with six additional pounds of holiday weight and can’t think of anything better than the couch and Breaking Bad on Netflix when five o’clock rolls around. Envision your life the way you want to see it – active and happy.  The option is solely up to you.  Empowering, right?  Open up the windows, power up your record player, pour a glass of wine (singular), relax, and cook a delicious and healthy meal.  It’s time to break free of habit.

    Work Up to Something

    For the lucky few that are still college, spring break is just around the corner –go join an aerobics class. For the rest of us…what the heck is spring break?  If you’re looking to make a sharp three-sixty turn on your work out regimen, one of the simplest things you can do is sign up for a 5K race, color run, or mud run.  Running is a great way to increase the circulation in your legs and is a great cardio source for burning fat. An actual event will allow you to mark an official start and end date, making it possible to easily plan a day-to-day work out plan.  Once it’s complete, set a time goal for your next race and continue to work your way up.

    Find a Workout Buddy

     Whether it be your partner, best friend, or random person on Craigslist (we don’t judge), having someone to work out with causes you to become more accountable and makes your work out more enjoyable.  Cheating was a thrill in grade school, but this is your work out we’re talking about here…pretty serious.  This person will keep your head in the game and give you a reason to get up in the morning.  They will push you to your limits and you will do the same for them.  It will be your most productive social hours, ever.

    Stay (Almost) Away from the Scale

     Keeping up with your weight can be extremely discouraging at first and, in some cases, can cause you to give up.  Our advice is to start with an initial weigh-in to get familiarized with where you are and set your goals for where you want to be.  It’s then a good idea to put the scale away for the first month of your workout and/or diet.  You sometimes don’t see the numbers go down on the scale, but after a few weeks of sticking to the schedule, you will feel it.  After the month is up, weigh yourself again.  If you’ve been strict on yourself, you’ve lost a pound or three.  This will give you the extra boost you need towards reaching your weight loss goal.  From there on out, gradually start to bring the scale out more often to keep you on track.

    In 2013, we challenge you to finally become the person you want to be by being one of the few to stick with your New Year’s Resolution.  It won’t be easy, but before you know it, this challenge will begin turn into a lifestyle and you will be exactly where you’re supposed to be.

  • Natural Remedies for Improving Leg Circulation

    It’s Friday.  Apart from the occasional incoming call and the constant ticking of that annoying clock hanging on the wall beside your desk, the office is completely silent.  Unavoidably, your mind wonders away with conversing thoughts:  “What am I going to wear tonight?”, “Is Bigfoot real?”, “Wow, I should really shave my legs.”, and finally “These peanuts are making me thirsty!”.  Immediately, you jolt up from your miserably uncomfortable chair and attempt to make your way to the water fountain to refill your glass.  About .25th’s of a second later, your legs give out and you fall completely on your face.  “Asleep.  My legs are asleep!” you think.  Miserably embarrassed, you shake it off and try to play it cool in front of the rest of your co-works.  For the rest of the day, Barb, the older receptionist, insists on checking in on you every hour to see if you’re “doing okay”.  Sweet gesture, but can everyone just forget about it?  No chance.

Sure, you’ve lived a lot over the past sixty years…but you’re not done yet!
